Simple Arhar Dal Recipe: Comfort Food Done Right

Some meals don't need to be reinvented — they just need to be made well. Arhar dal (also called toor dal) is one of those meals. A good pot of it, simmered slowly and tempered right, is one of the most comforting things you can put on a plate.

Here's our go-to recipe — the one we make on busy weeknights and lazy Sundays alike.

Why arhar dal starts with good dal

Before the spices, before the tempering, the base ingredient matters more than people think. Unpolished arhar dal cooks down into a naturally creamy, slightly earthy dal without needing much help. Polished dal, stripped of its outer layer, can turn gluey fast and lose flavor along the way. Start right, and the rest of the recipe takes care of itself.

Ingredients

  1. For the dal: · 1 cup arhar dal, washed
  2. 3 cups water
  3. 1/2 tsp turmeric
  4. Salt, to taste

For the tempering (tadka):

  1. 2 tbsp ghee or oil
  2. 1 tsp cumin seeds
  3. 1/4 tsp mustard seeds
  4. 2 dried red chilies
  5. 3–4 garlic cloves, chopped
  6. 1 small onion, finely chopped
  7. 1 tomato, chopped
  8. 1/2 tsp red chili powder
  9. A pinch of asafoetida (hing)
  10. Fresh coriander, chopped, for garnish

 

Method

1. Cook the dal. Add the washed dal to a pressure cooker or pot with water, turmeric, and a pinch of salt. Pressure cook for 3–4 whistles, or simmer uncovered for 25–30 minutes if cooking on the stovetop, until soft enough to mash easily.

2. Mash lightly. Once cooked, mash the dal a little with the back of a spoon. You want some texture left — not a completely smooth puree.

3. Make the tempering. Heat ghee or oil in a small pan. Add cumin and mustard seeds and let them splutter. Add the dried red chilies and asafoetida, then the garlic — cook until the garlic just turns golden, not brown.

4. Build the flavor. Add the chopped onion and sauté until soft and lightly golden. Stir in the tomato and red chili powder, and cook until the tomato breaks down and the oil starts to separate slightly.

5. Bring it together. Pour the tempering over the cooked dal and stir well. Simmer for 3–4 minutes so the flavors settle in. Adjust salt and add a splash of water if the dal is thicker than you'd like.

6. Finish and serve. Garnish with fresh coriander and a small knob of ghee on top. Serve hot with steamed rice or roti.

A few tips

  1. Don't skip the tempering. It's the step that turns simple boiled dal into something you actually crave.
  2. Soak the dal for 20–30 minutes beforehand if you're short on cooking time — it cooks faster and more evenly.
  3. Leftover dal tastes better the next day. The flavors deepen overnight, so don't hesitate to make a bigger batch.

Good dal doesn't ask for much  just quality ingredients and a little patience. That's really the whole philosophy behind what we do.
